Stir Fry Kailan with Dried Shrimp & Garlic

Hiii...all. This time i give u one of my favorite vegie recipe. It's Kailan. Want to know why i love kailan so much? Because its crunchiness & this vegie don't have a bitter taste after cooked. I don't know why, but i think kailan is always taste good when u stir fry it. Most popular recipe for this vegie is stir fry it with salted fish. Since i'm not a big fan of salted fish, so i change it to dried shrimp & it taste better ( at least for me ^^,). Its not like i don't like salted fish at all, i can eat it of course, it's just i'm not a really big fan of it.
So here the recipe...

Stir Fry Kailan With Dried Shrimp & Garlic
  • 1 package of Kailan
  • Hands full of dried shrimp
  • 4 cloves garlic (pounded coarsely)
  • 2 tbsp oil
  • Salt to taste

Soak dried shrimp until the dried shrimp become soft & pounded.
In the steamer, steam Kailan until soft & tender.
In the medium high heat, stir fry garlic for a few minutes & add pounded dried shrimp & continue stirring until brown color.
Turn off the heat (u don't want to over cooked the kailan), add steamed kailan & mix it until well combined.
Serve hot.

Eggs Baked in Tomatoes

I woke up on Sunday morning with hope that i had some peace of mind. I had been worried about something lately. Hopefully we can settle it as soon as possible. So i woke up, went downstairs & open my fridge...there u go, i had a couple of tomatoes just asking to be cooked ^^, and this recipe had been on my radar for quite a while now. Its very simple, actually the original recipe called for basil paste ( u can click to my source), but i just don't want my leisurely Sunday morning getting too complicated. I just made it simple, just tomatoes & eggs & some seasoning & done :). Here my recipe...

Eggs Baked in Tomatoes
  • 2 large tomatoes
  • 2 eggs
  • Olive oil
  • Salt
  • Black pepper
  • White pepper
Preheat the oven to 180C.
Remove the tomato tops with a sharp knife. Scoop out the seeds with a teaspoon and discard, them place the tomatoes upside-down on paper towel for about 15 minutes to drain.

Season with salt, black pepper and smear the oil inside the tomatoes.
Carefully break an egg into each one & sprinkle white pepper on top.
Bake for about 15 minutes for upper & lower grill & another 10 minutes for upper grill only.

Dried Chili Paste

Ok, here's the thing, i gave u this recipe just so u know that every time i used 'chili paste' in my recipe, it means this one. I never bought chili paste from the store well except ready to eat chili sauce. But for cooking i used this one. It was from my mom, she advice us to always stocked this in the fridge so that every time we want to cook especially Malay dishes , we don't have to mess with our blender & wasting time just to wash it hehehe....i love u mom!! Here the recipe...

Dried Chili Paste
  • 90g dried chili
  • 2 red onion
  • 4 cloves garlic
Cut dried chili into small pieces, try to get rid the seeds as much as u can & wash it.
Boil the washed chili until soft & drain.
Cut onion into a small chunk.
Put the drained chili into a food processor or blender, add in onion, garlic & enough water to blend to form a paste.
Pour the paste into container & put it in the fridge. Its will last for a months.

Creamy Beef Broccoli

I'm a big fan of simple dish. I admit. Being a mother of 3 (6 yr to 6 mths) & a worker makes me want to act & move fast. Cooking included :), and i'm well aware that stir fry is one of the fastest way to do it. As usual, i pick up my kids after work & think what i'm going to cook for my family all the way home. To cook something that only needs 30 minutes to be done. So i decided to try this recipe. I saw it somewhere online, but i didn't keep it. This is one of the Chinese cooking, but i add something which is not 'chinese' haha..i add heavy cream. Simply because i want my beef taste creamy & its still taste good. This is what happened when u read too much food blog & too much cookbook..heheh..u will mess up with the original recipe. Here is my version...

Beef Broccoli
  • 1 bunch fresh broccoli (cut into florets)
  • 500g flank steak (thinly slices)
  • 1 tsp cornstarch
  • 1 tbsp oil
  • 1 tsp black pepper
  • 1 tbsp soy sauce
  • 2 garlic cloves (minced)
  • 2 slices fresh ginger (finely minced)
  • 2 tbsp heavy cream
  • Salt
Marinate beef with cornstarch, oil, soy sauce & black pepper for 30 minutes.
In the meanwhile, steam the broccoli until soft & tender, set aside.
Heat the frying pan & add oil.
Add minced garlic & ginger & stir fry over medium high heat for 20 seconds.
Add beef & stir fry for another 3 minutes.
Add heavy cream & salt to taste.
Place steamed broccoli on the plate & the beef on top of the broccoli.
